What the heck is Kombucha?

I’ve seen Kombucha in the supermarkets and have tried a few different flavors. I decided I like it but didn’t like paying almost $4.00 per bottle. After a weeks worth of research and watching YouTube videos I was ready to make my own!

What is it?
Kombucha is a variety of fermented, lightly effervescent sweetened black or green tea drinks commonly intended as functional beverages for their supposed health benefits. Wikipedia

You can find Kombucha in the "healthy" section in the refrigerated section at your local grocery store.  Kevita is one of the many brands you can buy.

Now my process:

Here is my gallon jar with the SCOBY* floating in it. Amazon sells the entire kit if you are interested. This is the link of what I ordered.

I added sweetened black tea to ferment for the first time (F1).
A thermometer is helpful to gauge the temperature. I have the jar on a heating blanket.

*SCOBY stands for Symbiotic Colony OBacteria and Yeast. The Kombucha SCOBY is a cooperative of microorganisms that feed on tea and sugar and whose products of metabolism make up the delicious and healthful beverage.

When the fermentation is finished after a few days depending on the temperature, you take the SCOBY out and fill your bottles with your brew.

Next is the 2nd fermentation (F2) which I added some fruit and fruit juice along with the sweetened tea brew.

After a few days you put the bottles in the refrigerator which stops the fermenting.

Then enjoy!
Happy BOOCH!
